In Charamicos, La Unión, Montellano and Puerto Plata you'll often see whole pigs being roasted on the spit.
On the previous day you could hear the squeal of pigs all around, as they met their fate ready for Christmas.
Now they are all being hung over wood fires, which gives the meat an extra special flavour.
Roasting a pig on a spit takes a long time to cook, so people work through the night to make sure that everything is ready for the 24th.
The meat is sold for 100 pesos per pound.
